Cook County Charcoal Seasoning
In 2012 the food trend was using charred vegetable ash as an ingredient in seasoning making. Unfortunately, that type of charred ingredient may not ever be available commercially. However, food grade activated charcoal produced from burnt coconut shells is! What is great about charred ingredients is the unique flavor they impart, different from smoke flavor provided from wood, but still just as familiar. We handcraft this seasoning by mixing together kosher salt, garlic, onion, pepper, activated charcoal, cumin, thyme, chipotle, oregano and hickory smoke flavoring. This blend not only tastes great on steaks, chicken, and seafood, but it makes an excellent presentation as well. You can also try on vegetarian options as well like tempeh and tofu.
