We start with a base of medium chili powder, paprika, salt, coriander, cumin, black pepper, crushed red pepper, Tabasco green chile powder and Mexican oregano. The Chimayo comprises about one fifteen of the blend and takes the heat level to a point where it is flavorful but not unbearable. Try this blend on all types of Mexican and Tex-Mex foods. We have found it also works well in dirty rice, grilled skirt steak, fajitas and tacos.
