Mt. Evans is the tallest of the mountains in Colorado that you can drive to the top of. At its peak, you can view the spectacular rugged terrain of the Rockies. We tried to emulate that ruggedness by using chunky pieces of herbs and spices in this butcher’s rub. To make the rub we hand mix extra coarse and coarse black pepper, red and green bell peppers, minced green onion, garlic, white onions, shallots, ground Mediterranean thyme, ground California basil and spices.
