Ideal Late Summer Meals
with Stephanie Bullen
It’s that perfect time of year for food. Luscious harvest fruits and vegetables are at their finest, it’s still perfect weather to squeeze in a bit more summer grilling, and we’re starting to come into prime tailgating season. Menu options are virtually unlimited!
If you’ve been keeping up with us in the store, you’ll know that we started the season with summer sips and then unveiled a great new, Caribbean-inspired, seasoning: Bajan (rhymes with Cajun). But don’t overlook the sides and salads. Spices and seasonings combined with a few unique add-ins can give new life to traditional summer sides.
I said earlier that menu options are virtually unlimited. So, how about a few ideas for putting these great recipes together?
For an Asian inspired late summer dinner: Sip a Sake Sparkler and serve chicken skewers with Asian Peanut Butter BBQ Sauce, Thai Curry Slaw or Loaded Baked Potato Salad prepared with Indochina Seasoning.
If you didn’t make it to the beach this summer, try a Caribbean menu: Piña & Lime Coladas, Caribbean Grilled Fish Tacos or Bajan Hot Pepper Grilled Chicken (and, yes, this one does have a kick!), with Grilled Pineapple and Avocado Dip and chips.
Take a quick trip to the Mediterranean with this menu: Blackberry Sangria, Greek Grilled Chicken Salad, Mediterranean Orzo Pasta Salad and Grilled Watermelon “Caprese” Wedges with Pomegranate Molasses Vinaigrette.
It’s sometimes nice to revisit the classics. This menu is “all American”: Great Plains “4B” Bison Burger, Southwestern BBQ Beans and an iceburg wedge salad with Black & Bleu Cheese Dressing. Add a pitcher of Raspberry Mint Lemonade to wash it all down.
We’re moving into prime tailgating season, and you’ll see some great crowd pleasing ideas in our stores. You’ll be the hit of the party with Bacon-Wrapped Bajan Jalapeno Poppers! Dips are quick and easy, with endless flavor potential. Try Black Garlic Dip, similar in flavor to a French Onion Dip, or Grand Dill Dip.
If you’re getting tired of buffalo chicken and bleu cheese, try a spicy Tennessee favorite: Nashville Hot Fried Chicken. We have even created a great recipe for wings featuring a salt-free blend: Marmalade Marinated Woody Creek Wings. A surefire crowd pleaser, Mojito Wings are both tangy and slightly sweet. If you’re thinking about pulled pork, brisket, ribs or chicken, simply make our BBQ Master Sauce and feature your favorite barbecue rub.
Enjoy the last, lingering days of summer. Keep your grill fired up and “GO (insert your favorite team here)!” Hey, you didn’t really think I was going to pick a favorite team, did you?
As always, we’d love to hear your feedback. You can review our recipes online or send your recipe creations to firstname.lastname@example.org.
