Carter’s BBQ: Longview, TX

My first stop of the day was at Carter's Bar-B-Que in Longview, TX. As I was taking pics of the signage (something I do before entering), I heard someone call me over to their car. This was when I realized that Carter's had a drive thru. I leaned in the window and met Buddy Up and Chris Jackson. Being from Longview, it was their opinion that there's no better barbecue for miles. And that was kind of the theme at Carter's. I got there a little past 11am and the drive thru already had a line. Inside, even though there was only one person in front of me, I could see that they were already working on what appeared to be many phone in orders. I was happy for them because local support is critical to the success of any small business.
Curt Carter put his name on his barbecue joint in 1994. He and I enjoyed swapping fishing stories and learned about each other's families. When it comes to barbecue, Curt is the pitmaster and his son is in training to step up one day soon. Family is the number one priority to Curt and he treats his customers like that, which is probably why the place was packed with regulars by the time we finished our meeting.
The tray of barbecue I tried included an item that was new to me, boudin (or boudain as Curt emphasized..."that's how it is spelled on the box"...and he pronounces it boo-dan). Either way, this was the star of the tray for me. If you haven't had it before (like me), it looks like a sausage, but it is loosely stuffed with white rice, green onions, green pepper and small bits of pork butt. I also enjoyed the ribs and the potato salad.
