Pulling up to stop number three for the day, Grady's BBQ in Dudley, NC, you immediately know you are in for a special barbecue experience. Like many of the stops we've been to in the Carolinas, the joint is clearly a joint and just the type that gets us hungry for more 'cue... even if it's our third meal before 1:30pm!
Inside we met Steve Grady, the 80 year old pitmaster and owner. After we ordered our selection of terrific smelling 'cue he decided to sit down with us and talk barbecue and Grady's history. Honestly, if we didn't have two more stops today I think we still be there talking with him and just taking it all in. Our conversation was filled with big laughs, but we also learned how he picks out a pig for his whole hog bbq and other great tidbits that I'll be sharing later.
Our order consisted of flavorful chopped BBQ pork and turkey, cued dark meat chicken, collards flavored with a touch of chicken fat, black eyed peas, butter beans and a slice of Steve's homemade sweet potato pie. What a great feast this was, only topped by the memorable chat.
