Rooster’s Roadhouse: Denton, TX
with Jerrod Janakus
My second stop today was at Rooster's Roadhouse-Denton where I met Mike Wing, the GM. He describes Rooster's as less of a typical barbecue joint and more of combo bbq/burger/bar where people can come and get some solid food and have great time. And the ambience and vibe there totally matched that description. When you read the reviews on this place they seem to be doing it right because people really like it.
When it comes to the food, Mike piqued my interest when he described to me how they make their turkey. Before it's smoked, they slather it with mayo and a nice coating of coarse black pepper. The mayo permeates the turkey, so when it is served you can't see any mayo on it, but it has a nice tangy, yet peppery finish. They make a vinegar based slaw that takes seven days to pickle/ferment before it is ready to be served.
If you’re interested in something a little different than straight up barbecue, this is a place where you'll find it and possibly a few new friends as well. Hey Mike...from one Cubs fan to another, thanks for the time, food, and tee! #chasingbbq
