DIRECTIONS:
In a medium pot, stir Thai Coconut Curry Soup mix and chicken broth until combined. Add chicken and bring to a simmer over medium-high heat. Reduce heat to medium-low, cover, and cook for 20 to 25 min. until chicken is cooked through. Carefully remove chicken from pot and slowly stir in coconut milk. Using two forks, shred chicken and add back to pot.
SERVING SUGGESTIONS:
Top with cilantro, sliced scallions, or lime wedges.
NOTE:
For a vegan or vegetarian version, use cubed tofu or shredded jackfruit.
