The word curry is derived from the word kaari meaning sauce or gravy. In India, pronunciation and meaning can vary between castes. To vegetarians it means vegetables cooked with spice and coconut. To meat-eaters it is pronounced with an emphasis on the end, and simply meaning meat.

If you leave curry pastes in the refrigerator for a few days more and more of the flavors will mature.
