What We're Doing with Our Fall Harvest

We spent the summer talking about seeds—those often overlooked seasonings—during our Seed to Seed promotion. We planted seeds in May, explored how we use seeds as seasoning in June, brined with seeds in July, grilled with seeds in August, and preserved with seeds in September. Now we’re looking at ways to take the garden harvest bounty from what we planted this summer and make it last into the fall and holiday feast season. We planted cucumbers, tomatoes, beets, red onions, and jalapeños over the summer. And here’s what we’ve been doing with them.

Cucumbers: Probably one of the most refreshing things to come out of the garden, we’ve been making lots of salads, sauces, and pickles with these crunchy fellas.

Lamb Burger with Ghost Curry Sauce
Even though fall is here, I just can’t give up my burger meals! This comforting burger can be pan seared indoors as the weather turns colder, and the cucumbers help cool down the spicy, warming sauce.
Harissa Spiced Green Beans

If you have heat-seekers at your holiday feast, try serving this as a side dish. The cucumbers are a refreshing addition to crunchy green beans and carrots, and they help balance of heat from the harissa.

Jalapeños: These are some of the most approachable chiles to grow, and they thrived in our garden. It was hard to keep up with the harvest! If you grew a lot of jalapeños or had access to bushels of them at the farmers market, here are two great ways to preserve them for fall and winter feasting.

Jalapeño Jelly 3 Ways
This base recipe offers a few flavor options—make all three if you scored a bunch of chiles. A trio of different jalapeño jellies spread over blocks of cream cheese makes a pretty holiday party platter.
Trio of Roasted Jalapeño Salsas
Another 3-way recipe, these salsas make colorful party snacks. Impress guests with a trio of smoky American, zesty Peruvian, spicy Spanish flavors, all made from the same roasted jalapeño salsa base.

Red Onions: We didn’t get a huge bounty of red onions from the garden this year but enjoyed the few that we were able to harvest.

Quick Pickled Onions
These are so easy and crazy addictive. They make a great topping for slow cooker delights like pork stew and taco soup. They’ll also make a zesty condiment for the roasted meats in your holiday spread.
Greek Lamb Sausage Pizza
Throw a few of the classic Greek ingredients like lamb, red onion, Kalamata olives, and feta on a Mediterranean herb sauced pizza dough and you have a pretty impressive weeknight meal or party appetizer.

Beets: Grilled, roasted and pickled were my favorite ways to enjoy garden beets over the summer. These recipes can easily transition into fall and holiday dishes as well.

Grilled Beet Salad
With Mediterranean flavors of ground cumin seeds and preserved lemon, this no-fuss way to prepare beet salad will likely win you over. You can also roast the beets indoors for similar effect.
Roasted Beet & Onion "Pickles"
Did I mention I like recipes that give you easy ways to prepare beets? This is one. Herb-y, onion-y, and earth-y, these are also addictively delicious. They’ll be making an appearance at my holiday feasts.

Tomatoes: From sauces to sides, the uses for our garden tomatoes this summer were plentiful. Luckily we have access to tomatoes all year long at the market, so we can keep making some of these favorites.

Jerusalem Tomato Salad
Featuring sesame-seed spiked Za’Atar Seasoning and toasted pita pieces, this zesty side salad is a refreshing addition or alternative to a traditional green salad.
Spiced Vanilla Tomato Jam
What makes this jam easy is that you don’t have to go through the effort of peeling tomatoes. Simply chop and simmer with sugar and seasoning. It has a great balance of sweet and savory flavors that go with anything from a cheese plate to toast to burgers.
