Cubeb Berries
Cubeb berries are also known as Java Pepper as they originate in Indonesia. They are sometimes called Tailed Pepper because of the small stem that usually remains on each berry. Cubeb berries have a mild peppery flavor, similar to black peppercorns. Like allspice berries they have nutmeg-like notes, which become more noticeable during the cooking process. The strongest flavor though is a potent, lingering camphor or eucalyptus quality.
Cubeb berries are particularly good when used in longer cooking processes like soups and stews. Use to flavor meat or vegetable dishes. If you use whole cubeb berries in cooking, be sure to remove them before serving. For an interesting twist, add a few cubeb berries to your peppercorns the next time you fill your grinder!
