Ingredients

  • For donuts:

  • 1 Tbsp. butter
  • 1 apple, peeled and diced
  • 1 cup all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. Baking Spice
  • 1/4 tsp. kosher salt
  • 1/3 cup pure maple syrup
  • 1/4 cup unsweetened applesauce
  • 1/4 cup milk
  • 1 Tbsp. melted butter
  • 1/2 tsp. Madagascar vanilla extract
  • For glaze:

  • 1/2 cup powdered sugar
  • 1 Tbsp. milk
  • 2 Tbsp. Spiced Vanilla Bean Sugar

Based loosely on Baked Apple Cider Donuts from My Darling Vegan.

Directions

For donuts: Melt butter in a non-stick pan. Add apple pieces and cook, over medium heat, until soft (about 5 to 10 min.). Set aside. Combine dry ingredients salt in a large bowl. Whisk wet ingredients together in a separate bowl. Add wet ingredients to dry ingredients and whisk until a smooth, thick batter forms. Fold cooked apple pieces into the batter. Spoon batter into a greased 6-cavity doughnut pan, filling each mold about three quarters full. Bake in a 350 degree oven for 10 min. Let doughnuts cool completely before glazing.

For glaze: Whisk powdered sugar and milk together in a small bowl until smooth. Drizzle glaze over each of the cooled doughnuts (just enough to coat the tops), then sprinkle with Spiced Vanilla Bean Sugar.
