Also known as crack pie, this chai-inspired chess pie is super simple to prepare. The warm chai flavors pair beautifully with fresh blueberries. A great pie for tea time...or anytime, really.



*Fresh blueberries are best for this recipe; frozen blueberries yield too much liquid for the pie to set up.


Preheat oven to 350 degrees. Rinse and drain blueberries. Pour blueberries into pie crust. In a separate bowl, mix together melted butter and sugar. Add beaten egg and stir in flour, salt, extract, and Mt. Baker Chai Spice Seasoning. Pour mixture into the pie crust over blueberries. Bake for 1 hour. Check after 30 min.; if crust edges are becoming too dark, cover edges only with foil. Let cool completely before serving.

Serving Suggestions

Serve with Cardamom Whipped Cream. Store leftovers (if there are any!) in the refrigerator. This pie freezes well, too.

This was quick and easy to prepare - which makes it a great recipe to have up your sleeve. It was also a real crowd pleaser. The chai spice seasoning gives it that little something extra that really turns heads. I'll be making this again soon!
