• 1 cup uncooked white rice
  • 1 1/2 cups water
  • 1/2 cup coconut milk
  • 3/4 cup sweetened coconut flakes
  • 1/4 tsp. Ground Jamaican Allspice


Combine rice, water and coconut milk in a medium saucepan. Bring to a boil, then reduce to a simmer, cover and cook for 15 min. Working quickly, remove the cover and thoroughly stir in coconut flakes and allspice. Replace cover and let flavors meld together for 5 min.

Serving Suggestions

Serve with any of our Caribbean or Southeast Asian inspired recipes. Makes a great side for our Bajan Hot Pepper Grilled Chicken. Used as the base for our Pineapple Coconut Fried Rice.

Very tasty! Made this with jasmine rice because that's all I had on hand, and other than being a little too sticky, it was delicious. Very refreshing. Paired it with shrimp tacos with mango salsa -- oh yeah, baby!
