Spice Shop Cobbler

Ingredients:
6 peaches, peeled and sliced (peeling is optional)
1/3 cup Brown Sugar & Spice Honey Ham Rub
2 tsp. Saigon cinnamon
6 tbsp. unsalted butter
1 tbsp. lemon juice
1 1/2 cup granola

Notes:
Using our Brown Sugar & Spice Honey Ham Rub in this cobbler gives it very slightly spicy kick. Really yummy and super easy to make. Feel free to replace the granola with crushed graham crackers.

Directions:
Slice and peel peaches and put them in a large bowl. Melt 4 tbsp. of the butter and set aside. In a small bowl, mix Brown Sugar & Spice Honey Ham rub and cinnamon together. Add 2 tbsp. of this dry spice mixture to peaches with melted butter and lemon juice. Mix well to coat the peaches. Pour peach mixture into a non-greased 8x8 inch pan.

Add granola into the remaining Brown Sugar & Spice Honey Ham rub and cinnamon mixture. With a fork, cut the remaining 2 tbsp. butter into the mixture until it is crumbly and butter is incorporated. Spread granola mixture over top of peaches. Bake for 25 minutes in a 350 degree oven.

Serving Suggestions:
Serve warm or at room temperature topped with vanilla bean ice cream.
