Garam Masala Spiced Cashews

Ingredients:
- 4 cups cashews, raw and unsalted
- 1 x large egg white, lightly beaten
- 1/4 cup sugar
- 4 tsp. Garam Masala
- 1 1/2 tsp. Kosher salt
- 1/2 tsp. ground cayenne*
Notes:
*For a spicier version, use 1 tsp cayenne.
Directions:
Preheat oven to 300 degrees. In a large bowl, coat cashews with egg white. Add rest of ingredients and stir until thoroughly coated. Line a large baking sheet with parchment paper. Spread nuts in a single layer on the sheet. Roast, stirring every 5-10 minutes until golden brown (about 25-35 minutes). Break up any clumps, cool, and serve.

Serve as a snack or appetizer.
