Recipe: Pearl Street Cedar Plank Salmon
Simple but impressive techique to cook delicious salmon
If using a 2 lb. fillet, just double all ingredients. Basically, use 1 Tbsp. ingredients per pound of fish.
Soak the cedar plank for several hours before cooking; the longer you soak it the better! Wash and pat dry salmon fillet. Rub with olive oil and apply 1 Tbsp. per pound of Pearl Street Plank Rub. Allow about 30 min. for the rub to permeate the salmon. Heat grill to 350 degrees and heat the plank for about 3 min. on each side. Place salmon fillet skin side down on the plank and close the grill lid. The salmon should be cooked to medium in 12 to 15 min., depending on fillet thickness.
Great served with roasted potatoes and grilled asparagus lightly drizzled with olive oil and grey sea salt. Put potatoes in a foil pack with herbs and butter and place on grill about 30 min. before you put on your salmon. Squeeze fresh lemon over your salmon and asparagus.
