Note: If using a 2 lb. filet, just double oil and rub. Basically, use 1 tbsp. oil and rub per pound of fish.
Directions:
Soak the cedar plank for several hours before cooking. The longer you soak the plank the better! Wash and pat dry salmon filet. Rub with olive oil and apply Pearl Street Plank Rub evenly. Allow about 30 minutes for the rub to permeate the salmon. Heat grill to 350 degrees and heat the platter for about 3 minutes on each side. Place salmon filet skin side down on the plank and close the lid. The salmon should be cooked to medium in 12 to 15 minutes.
Serving Suggestions: Great served with grilled asparagus lightly drizzled with olive oil and gray sea salt and roasted potatoes. Put potatoes in a foil pack with Herbs de Provence or Cantanzaro Herbs and butter and place on grill about 30 minutes before you put on your salmon. Squeeze fresh lemon over your salmon and asparagus.
