Recipe: Peruvian Pinwheels
These make a simple and flavorful party appetizer or a Latin-inspired lunch snack.
Combine all ingredients except tortillas in a medium bowl and blend thoroughly. Spread ½ cup mixture over each tortilla, leaving ½-inch space to edge of tortilla. Tightly roll up tortillas, wrap each in plastic wrap and refrigerate for 2 hours. Remove from refrigerator before serving. Use a serrated knife to cut ½-inch wide slices and arrange on a serving plate.
Use flavored tortillas (tomato, spinach) for a colorful presentation. Great with margaritas or mojitos.
