Recipe: Quick Veggie Stir-Fry

In a small saucepan, cook the green beans in boiling water for 3 to 4 min. then drain. In a large skillet over medium heat, saute blanched green beans with squash, zucchini, and onion in olive oil for about 5 min. Sprinkle with garlic and seasoning of choice, and cook for 3 to 5 min. longer, until veggies are crisp-tender.
Serve with rice or noodles for a main dish. Or serve as a side with holiday ham, turkey, or other roasted meats.
