Directions:
Heat oil in a sauce pan over medium high heat. Add onion and cook until translucent, stirring, 4-5 minutes. Reduce heat to medium and stir in tomatoes. Next, thoroughly stir in remaining ingredients being sure to crumble the herbs as they are added in order to release their full flavor. Cook for 5 minutes, stirring occasionally. Reduce heat to low and simmer, covered for 8-10 minutes, stirring occasionally.
