Simple Syrup: Coconut-Kaffir

Star Anise, Broken, Organic 1 oz bag $2.95
Kaffir Lime Leaves, Dried 1/4 oz bag $5.80

Ingredients:

  • 1/2 cup sugar
  • 1/2 cup coconut milk (from a can)*
  • 1/2 cup water
  • 1/2 cup crushed Kaffir lime leaves
  • 2 Tbsp. broken star anise pods

Notes:

*Canned coconut milk will cause syrup to separate when stored, so shake syrup to combine before using. Or substitute the ½ cup canned coconut milk and ½ cup water with 1 cup coconut milk beverage brand, like Silk or So Delicious.

Directions:

Whisk sugar, coconut milk and water together in a small saucepan. Bring mixture to a boil, stirring to make sure sugar dissolves, and cook for 1 to 2 min. Remove from heat and add Kaffir lime and and star anise. Cover and allow mixture to steep until room temperature, about 20 min. Strain and store in a sealed container in the refrigerator. Use within 2 weeks.

Serving Suggestions:

Mix 1 Tbsp. syrup with 8 oz. club soda, seltzer water or sparkling wine. Use in our Kaffir Colada, Sake Sparkler or Coconut-Kaffir Cucumber Salsa recipes.
