Ingredients

  • 1-16 oz. package slaw mix
  • 1/4 cup chopped cilantro
  • 1/4 cup thinly sliced scallion
  • 1/2 red bell pepper, thinly sliced
  • 3 Tbsp. lime juice
  • 3 Tbsp. rice wine vinegar
  • 1 Tbsp. sesame oil
  • 4 Tbsp. canola oil
  • 2 Tbsp. honey
  • 1 Tbsp. Thai Green Curry
  • salt and pepper to taste

Notes

Recipe also works well with our Red Thai Curry.

Directions

Place first 4 ingredients in a large bowl and toss to combine. Whisk together remaining ingredients in a separate small bowl. Pour dressing over slaw mixture, cover and set in refrigerator for at least an hour before serving, stirring periodically.

Serving Suggestions

Serve as a side or topping with burgers, pulled pork, chicken sandwiches or your favorite grilled meat.

I only had the Savory Spice Red Thia Curry and it does say that this works as well, so I gave it a try. Fantastic! Such a great balance, just what you have in mind then you think of Thai cuisine. Spicy, sweet, acidic, and lots of great textures. I have made this quite a few times and almost out of Thai Red Curry so time to reorder (and guess who will also be getting Green Curry) I have also added other crunch veggies such as Nappa cabbage, fresh peas, radishes, julienne of kohlrabi, sliced radishes. Also fresh Thai basil or a touch of mint.
