Grilled Rosemary Quail with TSM's BBQ Chicken Rub

Ingredients:

For quail:
- 12 x quail
- 12 x sprigs rosemary
- 1/2 cup Team Sweet Mama's BBQ Chicken Rub

For brine:
- 1 x yellow onion, chopped
- 1 quart apple cider vinegar
- 2 Tbsp. Team Sweet Mama's BBQ Chicken Rub
- 2 Tbsp. crushed red pepper flakes
- 1 pint apple juice
Notes:
If using a charcoal grill try adding some apple wood chips to provide a little additional sweetness!
Directions:
In a large bowl, thoroughly mix together all the brine ingredients. Add the quail, stir to coat. Cover, and place in the fridge to marinate for a few hours. Preheat grill. Next, remove quail from brine, drain and stuff each quail with a sprig of rosemary. Place on a baking sheet and generously season with Team Sweet Mama BBQ Chicken Rub. Grill quail. Serve hot.
