Mediterranean Spiced Cucumber Medallions
- 4 oz. Chevre goat cheese
- 1/4 cup Greek yogurt
- 1/4 red bell pepper, chopped (reserve remaining pepper for garnish)
- 1 Tbsp. Mt. Olympus Greek Style Seasoning
- 1 English cucumber, sliced into 1/2-inch rounds
Place goat cheese, yogurt, ¼ red bell pepper and Mt. Olympus in a food processor and puree until smooth. Place the goat cheese mixture into a plastic zip-top bag and cut a small hole in the corner. Lay out the cucumber slices and top with goat cheese mixture and sprinkle with remaining chopped bell pepper.
Thinly slice bell pepper and top each slice.
