Mediterranean Spiced Cucumber Medallions

Savory Spice Shop Ingredients
Mt. Olympus Greek Style Seasoning 1 oz bag $2.70

Ingredients:

  • 4 oz. Chevre goat cheese
  • 1/4 cup Greek yogurt
  • 1/4 cup red bell pepper, chopped (reserve the rest for garnish)
  • 1 Tbsp. Mt. Olympus Greek Style Seasoning
  • 1 x English cucumber, sliced into 1/2" rounds

Directions:

Place the goat cheese, yogurt, ¼ red bell pepper, and Mt. Olympus Greek Style Seasoning in a food processor and puree until smooth. Place the goat cheese mixture into a plastic zip top bag and cut a small hole in the corner. Lay out the cucumber slices and top with goat cheese mixture.

Serving Suggestions:

Thinly slice bell pepper and top each slice.
