Directions

In a food processor, pulse beans, Peruvian Chile Lime, cilantro, scallions, garlic and lime juice until blended. With food processor running, slowly pour in olive oil in a thin stream until desired consistency is reached. Season with additional Peruvian Chile Lime, lime juice and salt to taste.

Serving Suggestions

Great as a dip with pita chips and veggies or as a spread on a quesadilla or sandwich wrap.

I work at the Savory Spice Shop in Greensboro, NC. I made this on Friday to take to our Saturday Tastings the next day. I tripled the recipe and thank goodness I did because it was devoured by our customers. So much better than store bought and SO easy. Keeping in mind I tripled the recipe, start to finish this only took about 20 mins. I am making my own from now on. Great recipe!
