Brown Sugar & Spice Honey Ham Rub (Salt-Free) 2 oz bag $3.25
Cinnamon, Saigon Cassia: Ground 1/2 oz bag $1.45
Until August 28, 2014 the Brown Sugar & Spice Honey Ham Rub (Salt-Free) blend contained pink peppercorns, which are related to cashews and may produce an allergic response in people with allergies to tree nuts. Effective August 28 we have adjusted the blend to no longer include pink peppercorns.

Ingredients:

Notes:

*2 lbs. of frozen peach slices (about 6 cups) can be used in place of fresh peaches. Allow peach slices to defrost before using.

Directions:

For peaches: Preheat oven to 350 degrees. In a large bowl, combine Brown Sugar & Spice Honey Ham Rub, honey, lime juice and cinnamon and stir into a paste. Add peaches and stir until peaches are thoroughly coated with the paste; the paste will disperse from the natural liquids in the peaches. Once peaches are coated, divide into 4 large or 6 small oven safe ramekins and bake for 10 min.

For topping: In a large bowl, combine flour, white sugar, brown sugar,  cinnamon, baking powder, salt and butter. Blend with fingers to a coarse meal consistency. Add the warm lemon juice and stir to just combined. Remove peaches from oven and spoon equal dollops of dough over each dish. Bake for 30 min. or until tops are golden brown.

Serving Suggestions:

Serve warm or at room temperature topped with vanilla bean ice cream or fresh whipped cream.

Yields:

4 to 6 servings
