Vindaloo Spiced Candied Fruit & Nuts

Ingredients:
- 1 x egg white
- 1/4 cup brown sugar, packed
- 1 tsp. pure Madagascar vanilla extract
- 1 Tbsp. Vindaloo
- 2 cups pecans, chopped
- 1/2 cup candied orange peel
- 1/2 cup dried cranberries
Directions:
Preheat oven to 300 degrees. Line a cookie sheet with greased parchment paper. In a mixing bowl, beat egg white until stiff. Add brown sugar, vanilla, Vindaloo and mix. Stir in nuts, candied orange peel and cranberries until coated. Spread mixture on cookie sheet. Bake for 17-19 minutes. Cool to room temperature.
Serving Suggestions:
Cut into squares, can be served as dessert or as a nutty, fruity snack.
