Carob Powder, Toasted
Native to the countries surrounding the Mediterranean Sea, carob powder is created by finely grinding the toasted fruit pods of the carob tree. Carob is now used around the world as a healthier chocolate substitute as it has a low calorie count and no fat.

The taste of carob powder is reminiscent of chocolate; a fresh carob pod however, has a flavor more similar to dates.

To substitute carob powder for cocoa, replace one part cocoa with one and one-half to two parts carob by weight. To substitute for chocolate, use 3 tbsp. carob powder and 1 tbsp. water in place of each square of chocolate.
