Of our four cinnamons, this one is probably the most familiar to you. Indonesia produces the largest crop for export making it the most commonly available in your average grocery store. It is a quality product, very smooth, but doesn’t have the strength of our other cassia cinnamons. We also carry Indonesian cinnamon sticks.

Cassia is what we here in the States commonly know as cinnamon. However, in reality, “true” cinnamon is the bark of an actual cinnamon tree, whereas what we know as cinnamon is the bark of a cassia tree. Try this cinnamon in pies, pastries and other sweets. Sprinkle on toast, pancakes, waffles or in coffee. Pairs well with pumpkin and other squashes and is a necessary ingredient in many curries.
