Native to Ceylon (Sri Lanka) and still grown there today, this is the preferred cinnamon in England and Mexico. We refer to this as “true” cinnamon because that is exactly what it is, the bark of a cinnamon tree. In the States, what we know as cinnamon is really the bark of a cassia tree.

We carry both hard cassia cinnamon sticks and these soft Ceylon sticks. The flavor of Ceylon “true” cinnamon is not quite as strong as cassia, but it’s sweeter and has a hint of citrus. These delicate 5 inch sticks are rolled in a parchment style making them very easy to crumble and use. There are 4 to 5 sticks in an ounce.
“True” cinnamon trees grow up to 20 to 30 feet tall and actually grow best in almost pure sand.
