Kala Jeera, also known as black cumin, is grown in Kashmir, northern Pakistan and Iran. It has an earthy, musty smell and when fried or cooked the flavor becomes nutty. Kala Jeera is shaped like a slender crescent, is darker in color and has a sweeter flavor than ordinary “white” cumin.

Traditionally, Kala Jeera is used in sauces, curries and Indian rice dishes. It can also be used in small amounts to enhance the flavor of meats, soups and stews. Kala Jeera should not be confused with regular cumin or the unrelated Nigella.
