To make mustard:
To make mustard to its normal thickness, use 8 parts powder by volume to 7 parts liquid. Remember that mustard is very hot when first blended. For a milder mustard, store at room temperature for about 8 weeks, 6 weeks for medium heat and 4 weeks for hot. Refrigeration will stop the mellowing process almost immediately; so once you’ve achieved your desired heat level, stick it in the fridge.
If you want to use your mustard immediately, the temperature of the liquid is the key. If you blend the powder with a hot liquid it will produce milder mustard. For maximum heat, use a very cold liquid. And remember to take into consideration which heat level of mustard powder you start with.
For a simple mustard recipe, start with 1 cup mustard powder, 3 fluid ounces water and 3 fluid ounces vinegar. Mix well and salt to taste. Let stand 10 minutes while considering what other flavor you might want to add to make it your own.
