Pepper, Black, Tellicherry: Cracked
Tellicherry black peppercorns are the best of the best and come from the Malabar Coast of India. These peppercorns are left on the vine to mature longer, creating a mellow, well-rounded taste which is a bit fruity.
Back in the days when the Roman Empire ruled, black pepper was used as an international means of currency and was said to be the king of all spices.
The sizes are determined by running the cracked or ground peppercorns through a variety of sieves or screens. Common mesh sizes such as 6, 10, 15, 20, 30 and 60 refer to holes per square inch. Medium Cracked: 10/15 mesh size. Most chefs prefer for steak, tuna or pork au poivre.
