Fennel grows wild all over the California coast. The pollen from the plant is prized for its bold, yet delicate fennel flavor. We tried to capitalize on those flavor attributes in creating this elegant rub.

We handcrafted this rub by precisely mixing together sugar, kosher salt, orange peel, coriander, California paprika, fennel, onion, garlic, and Aji Amarillo chile. Crab and lobster are native to California and we think these are the kinds of delicacies this blend deserves! Try on a variety of seafood: scallops, mussels, lobster, crab or fish. This blend is also great on pork, chicken, and eggs. Try on your vegetables and potatoes too!
