In spring, Napa Valley is blanketed by the yellow blossoms of mustard flowers. In addition to the condiment, mustard seeds are a key ingredient to pickling. A pickling spice rub is the perfect way to marry a piece of California history to the bountiful produce of the state.

Ingredients:
Salt, Saigon cinnamon, Lampong peppercorns, brown mustard seeds, yellow mustard seeds, ginger, coriander, dill seed, mace, allspice, juniper, cloves, Thai chiles, bay leaves, sugar, lemon peel, turmeric and orange peel

We handcraft this blend by first grinding our classic pickling spice: Saigon cinnamon, Lampong peppercorns, brown mustard seeds, yellow mustard seeds, ginger, coriander, dill seed, mace, allspice, juniper, cloves, Thai chiles, and bay leaves into a fine powder and then complete it by mixing in salt, sugar, lemon peel, turmeric, and orange peel. Great on fresh or grilled vegetables, potatoes, and pasta salad. Use to season steaks, chicken, or burgers. Try on brisket or your next corned beef.
