BBQ Sauce Chasing BBQ Vegetarian
We spent the summer of 2016 in the test kitchen recreating Savory Spice Founder Mike Johnston’s favorite barbecue meals from his Chasing BBQ journey. There’s no getting around the fact that barbecue is, at its core, all about meat. But as we cooked our way through the various regions of barbecue across the country, we found a lot of vegetarian-inspired dishes that could stand alone as hearty barbecue fare. As we launched our new line of BBQ sauces inspired by Mike’s journey, we started exploring how to use them beyond the typical barbecued meat application, so now we’d like to share our 6 favorite recipes for a veggie BBQ feast.
In our opinion, pizza made on the grill is the best. We created an easy homemade Pizza Dough for Grilling, so you can make a seasoned dough that’s sturdy enough to stand up to the grill but still tender and chewy like a good crust should be. Instead of a tomato based sauce, try our Midwestern Sweet Barbecue Sauce or Woody’s Sweet & Tangy Barbecue Sauce to add classic barbecue flavor to the charred, grilled veggie pizza toppings.
You know a veggie burger is good when a meat-lover tries it and doesn’t even realize it’s vegetarian. That happened more than once when testing this veggie burger recipe. Sautéed eggplant provides a meaty texture to the burger mixture. The burgers are sauced with a creamy mustard featuring our Alabama White Barbecue Sauce mixed with simple homemade Pickled Mustard Seeds. Don’t skip the “crunch,” which comes from piling potato chips on top!
Grilled burgers don’t always have to be meat based. These black bean burgers hold up amazingly well on the grill. They’re seasoned with our Canyon Road Enchilada Seasoning and a dash of our Black Dust Coffee & Spice Barbecue Sauce to help bind the burger mixture together. Top the burgers with a refreshing homemade Basil Mayo, extremely easy Baked “Fried” Green Tomatoes, and addictive Quick Pickled Onions.
These pan fried veggie burgers have a crisp outer layer and a “meaty middle” made by pureeing cooked quinoa with garbanzo beans. Our customer favorite Red Rocks Hickory Smoke Seasoning gives the burgers a smoky flavor without having to smoke or grill them. They’re great between two buns or served over a heaping pile of greens. Don’t skip the suggested Apple-Carrot Quick Pickle for a tangy topping.
If I were to build a veggie BBQ plate, I’d start with three classics: mac & cheese, slaw, and cornbread. This particular mac & cheese is quick and easy to make but packs some big flavor thanks to the addition of our tangy, Worchestershire-spiked Black Dip Barbecue Sauce. A spicy slaw made with Hot Pepper Vinegar Barbecue Sauce kicks up the flavor of this plate. And the cornbread is a sweet accent featuring our Cinnamon Sugar. This unique cornbread recipe yields as a moist, cakelike texture that comes from using creamed corn in the batter. Take this recipe up a notch by using your own homemade Grilled Creamed Corn in the cornbread.
5. Grilled Eggplant with Savory Fruit Compote
Brining isn’t just for meat! Did you know you can brine eggplant too? Using citrus & savory Brining Spice Ready Mix, you can make Quick-Brined Eggplant; the brine infuses the bland eggplant with flavor and helps to keep it from drying out while it cooks. We dust thick slices of brined eggplant with sweet Georgia Peach Spice, which helps create a flavorful char when it’s grilled. Top the grilled slices with a cherry-peach compote infused with a kick of ancho chile heat for a flavorful vegetarian-friendly dish.
