Ok I'm into countdown phase...10 days left on a trip of a lifetime. Day 29 started with stop 68 at Bucky's BBQ in Greenville, SC. Here I met Wayne Preston, the founder and a man of faith. I say that because Bucky's BBQ was an answer his prayers. The super short version is he was highly successful, lost it all, found his spirituality and was lead to...well start selling BBQ. Wayne has mostly handedoff his growing barbecue business to his kids and now spends his time giving back. That said, he hasn't lost his passion for cue...he competes around 15 times or so a year and teaches BBQ classes. After spending the time I did with him, I'd have to say he is an easy man to admire.
I also admire their cue! I was generously given a tasting plate of bark filled pulled/chopped pork, perfectly cued ribs and chicken as mains and those were paired with a light sweet mayo slaw, spicy sweet baked beans and sweet potato crunch...along with their three made-in-house sauces. Highlights for me were the well seasoned, barked filled pork, ribs that didn't need sauce, the beans, amazing sweet potato crunch (basically mashed sweet potatoes topped with a crunchy oatmeal cookie!) and their drinkable pepper vinegar sauce!
You can get mustard sauce here, but Wayne's version of hickory smoked South Carolina cue is more then that..it's about seasoned flavor...its about friends and family and its about faith! #chasingbbq
