Charlie Vergo's Rendezvous: Memphis, TN

The stories, stars and images of Charlie Vergos' Rendezvous in Memphis, TN are readily available on the internet because when you've been around as long they have (since 1948!) and have been as successful, people talk about you, take pictures of you and, in this day and age, they 'share' about you. Admittedly, their own success drives their high heat, quicker, charcoal barbecuing style for their ribs...low and slow isn't going to work for a place that can seat up to 700!

My appreciation for what they are doing comes from being a spice guy. The spice rub is what it's all about when you're eating here. What's very unique about their rub is that it is based around the flavor profile of a Greek chicken or lamb seasoning. However, to make it read barbecue, they needed to get that red color into the mix, so they added a very nice balance of paprika.

Even this spice information is out there on the internet already. So what I can share with you that would be new and interesting? I suppose my and Janet's experience there will have to work.

This road weary, 2-3 pounds heavier (ok maybe 4-5 pounds), barbecue-chasing spice-nerd and my fresh-faced wife were treated like barbecue royalty at Charlie Vergos' Rendezvous! Frank met us at the door and gave us the lowdown. He then handed us off to Calvin who told us that all he needed was our drink order because the food had already been decided upon. Then the food started arriving...first the famous sausage, cheese and pickle plate, then the Greek salad, then the lamb ribs, and for the finale, the thing everyone goes there for... their heavily (or heavenly) spiced ribs. And in our case, because we are "barbecue royalty," the ribs came with a side of brisket, mustard slaw and baked beans. What a feast! Thanks CVR. #‎chasingbbq
