Memphis Barbecue CO: Horn Lake, MS182

I'd been hearing about Memphis Barbecue Company from various followers and even other pitmasters, so I had very high expectations. And while it is way more a restaurant then a barbecue joint (sit down service and it's BIG), it is easy to understand why people rave about this place.
We didn't get to talk with Melissa Cookston, the world champion pitmaster and owner, because she was busy finishing up her latest cookbook (have to pick that one up!). However, she did send over her manager to give us a look at the pit outside. The manager wasn't comfortable speaking for Melissa, so we didn't learn anything about what defines Memphis barbecue that way, so we let the made-from-scratch food do the talking.
Before we ordered, we received a complimentary basket of pig skins. I'm a fan of these! Janet then ordered the pulled pork baker (potato topped with pulled pork) and I tried pitmaster's sampler (dry rubbed baby backs, pulled pork and sausage with sides of turnip greens, cole slaw and cornbread). The stand outs were the turnip greens (best I've had so far), cornbread (almost like cake!) and the wonderful flavor of the ribs. I say flavor because I prefer a clean tug when eating a rib and these came very close to falling right off the bone...but heck, I still enjoyed them. All in all, a solid 'cue eating experience.
