REPLACEMENT STOP! Day 25 started very, very early in the morning. Tony Correa, my good friend since high school and Savory's graphic designer, was suppose to arrive in Atlanta about 8pm last night, but Mother Nature had other plans so he didn't arrive until 3:30am! We both got two hours of sleep and got out on the road so we could get to West Columbia, SC to make sure we didn't miss any stops. When you're #chasingbbq you don't let a little lack of sleep throw you off track!
When we got there it turned out that our original stop had a sign on the window saying they went on vacation. Oh the life of a small town barbecue joint...got to love it. Not to be deterred we learned of another joint that people in the area thought was great 'cue.
That's how we happened upon True BBQ and had the pleasure of meeting Ernest Zanders and his brother Milton. It's Ernest's place, but Milton is the marketing man and was dazzling in how he made everyone feel that "true" southern hospitality. Ernest's mom provides the soul with her homemade sides. And Ernest is the pit master behind the flavors. He started his spot out of his house, where truckers would stop by to buy his perfectly tender ribs at 6am. Word spread and the brick and mortar soon followed.
Their joint is about barbecue, but soul food is also available. If we weren't so focused on the task at hand, Tony and I could have easily been eating a pigs feet dinner instead...next time! What we did have was spare ribs, baby backs, pulled pork and turkey wings along with their three sauces. And we paired them with collards, mac & cheese and a South Carolina tradition...hash and rice. Everything was clearly homemade and we cleaned our plates. Highlights for me were the baby back ribs, turkey wing, collards, the mustard based sauce and that hash and rice. What a great way to start out the South Carolina leg!
