There's a solid 85% chance that whatever recipe you have planned for dinner tonight contains garlic or onion. Or both. Why? Mostly because they're delicious, but also because they are nearly universally synonymous with big flavor, being utilized in copious amounts across the majority of cuisines. So tonight, collectively in kitchens all across the world, we're going to dice onions, mince garlic, slice shallots, and chop chives. We're going to sizzle them in some butter or oil as a flavor base for doro w’et, pineapple fried rice, lentil stew, or shrimp scampi. Our friends and family are going to follow their noses to the kitchen; it's going to smell amazing.
