I'd heard about Pecan Lodge Catering a few years ago and tried to stop by back then, but just couldn't make it in time, so I was excited to try it on this trip. To make sure I didn't miss out, I was the first person in line which meant, to my surprise, that I got to ring the cow bell at the register...woo-hoo! I didn't get to talk with the pitmaster this time because they were super busy getting ready for what turned out to be an impressive line of people behind me.
The owners, Justin and Diane, have a great business going here in Dallas. They too were very busy (happy for them)...so while they didn't have time to talk barbecue with me, Justin did make time for a quick pic at the truck and I learned that they use an oak and hickory combo (although their website says mesquite and oak) for their smoking.
I tried a little bit of most of the meats and I enjoyed the smokiness and tenderness of their brisket. Both of their sauces were interesting as well. It's a cool stop that certainly has a big following and draws crowds of out-of-towners like me, so get there early if you want to try their 'cue without having to wait in a long line - although those lines can be some great fun debating barbecue! #chasingbbq
