REPLACEMENT STOP! Today my last planned stop in Memphis didn't pan out, so instead of skipping it, I decided to see if I could find a barbecue gem to share from Mississippi...and boy did I! Bob Roberts BBQ in Columbus, MS definitely looks like a joint, and definitely is, but it's the darn cleanest spot I think I've been in so far...and that's always makes you feel good about the cue you're going eat there.
When I walked up the parking lot toward the restaurant, I was greeted by a wave from the pit master, Mac. He not only operates the pits outside, but all of the cooking equipment is out there too. And I swear I never saw a fly in it...in an outdoor kitchen...ah-mazing!
Once inside, the cleanliness theme remained the same. I met a really friendly staff that treated me like they'd known me all my life, including Mama (Adele), Bob's mom who volunteers. As soon as I placed my order, the man himself walked through the back door. Bob looks the part of a barbecue guy and he's quite accomplished in cue competitions. That said, he views himself as more of a southern cook which may be why the sides were just as good as the cue!
I ordered ribs, brisket, pulled pork and chicken along with slaw, beans and the most amazing fried pickles and jalapeños to ever hit these lips! Most fried pickles have moisture on them even after they've been fried and the breading gets a little soggy. Not Bob's. They were more like thin chips and so were the jalapeños. I know I loved them both because I took them with me, which I haven't done much of given the task at hand.
The ribs were more fall off the bone than tug, but that is the way his customer's like them...and they were tasty. The other highlights were the pulled pork, brisket (done his way!) and the beans, slaw and his flavorful array of sauces!
Really good cue. Stop in and check out Bob's dream on a hill just off Hwy 45...I know you'll be treated right! #chasingbbq
