Ingredients

For soup:

2 Tbsp. olive oil

1 yellow onion, diced

3 carrots, peeled and sliced

2 celery stalks, sliced

3 cloves garlic, minced




1 (14.5 oz) can fire-roasted tomatoes

6 cups vegetable broth (or water with a bouillon cube)

1 zucchini, diced

1 red bell pepper, chopped

1 green bell pepper, chopped

1 cup green beans, trimmed and chopped

1 (15 oz) can cannellini beans, drained and rinsed

1 tsp. lemon juice (for brightness)


For serving:

Crusty bread or your favorite crackers

Freshly grated Parmesan (optional)

Directions

Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and sauté for 5-6 minutes until softened. Stir in garlic, Summit County Seasoning, salt, and black pepper; cook for 30 seconds until fragrant.

Build the Soup Base: Add fire-roasted tomatoes and stir to coat the vegetables. Pour in vegetable broth, scraping up any bits from the bottom of the pot. Bring to a gentle simmer and cook for 10 minutes.

Add Vegetables and Simmer: Stir in zucchini, red and green bell peppers, green beans, and beans. Simmer uncovered for 15-20 minutes until all vegetables are tender.

Finish and Serve: Stir in lemon juice and California basil for brightness. Taste and adjust seasoning as needed. Ladle into bowls and serve with crusty bread or crackers. Optional: Sprinkle with Parmesan cheese for extra richness.
