The mustard in this rub is a nod to the Polish roots of the Bucktown neighborhood.More Information
Bucktown gets its name from the large number of goats raised in the neighborhood during the 19th century when it was an integral part of the city’s famed Polish Downtown. Now it is a well-preserved district, known for its restaurants, galleries and artists.
The mustard base in this blend pays homage to the eastern European roots of Bucktown. Because of Poland’s close relationship to the East, they had access to many spices early on in their cuisine and were known for their spicy foods. Mustard was used as a condiment and as an ingredient in many different types of pickling and meat preparations.
Creating a dry mustard rub was quite difficult. Yellow mustard powder is unbearably bitter on its own, brown is touch less and was key to us finding a balance. Honey powder was the natural choice for knocking down the bitter flavor.
