Also called esquites, this layered salad packs all the flavor of elote into a portable package.

Ingredients

2 Tbsp. mayonnaise

1 Tbsp. lime juice



3 ears corn, grilled and cut from cob

1 jalapeno, diced

1 red or green bell pepper, diced

1/2 red onion, diced

1/2 cup cotija, crumbled

Chopped cilantro, to garnish

Lime wedges, to garnish

Directions

In a small bowl, combine mayonnaise, lime juice, Mexican Street Corn Seasoning, and Mayan Sea Salt. In serving cup or bowl, layer corn, mayonnaise mixture, peppers, onion, and cotija. Repeat layering process until serving dish is full. Garnish with cilantro, lime wedge, and additional cotija.
