Ingredients

2 Tbsp. unsalted butter

1 small yellow onion, diced

1 cup frozen corn, thawed

2 cloves garlic, minced

1 1/2 lbs. sweet potatoes, peeled and diced

3 cups apple cider





1/2 cup heavy cream

Directions

In a large pan, melt butter over medium-high heat. When butter foams, add onion and corn and saute for 3 to 4 min., or until onion is translucent. Add garlic and saute for 1 to 2 min., or until fragrant. Add sweet potatoes, apple cider, chicken broth, Poultry Seasoning, and Ground Jamaican Allspice. Stir and bring to a boil, then reduce heat and simmer for 20 to 25 min., or until potatoes are fork-tender. Use an immersion blender (or in batches in a stand blender) to puree the bisque until smooth. Add salt & pepper to taste, then stir in heavy cream. Rewarm over low heat before serving.
