Using dehydrated garlic saves time by eliminating peeling, saves your hands from smelling and your eyes from tearing. There is no need to re-hydrate powdered garlic. About 1/8 tsp. is equal to 1 average size clove. If you are on a low sodium diet, substitute 1/2 tsp. of salt with 1/8 tsp. garlic.
