Quick Pickled Carrots Recipe

INGREDIENTS
- 2 lbs. carrots, peeled and sliced into ribbons, rounds or matchsticks
- 2 2/3 cups apple cider vinegar
- 1 1/3 cups water
- 1/4 cup salt
- 2 Tbsp. Pickling Spice
- 2 tsp. Minced Onion
- 1 tsp. Minced Garlic
Add all Savory items to cart
DIRECTIONS
Pack prepared carrots tightly in a clean pint jar. Bring vinegar, water, salt and spices to a boil. Simmer, stirring to dissolve salt, for 2 to 3 min. Pour hot liquid over carrots, making sure to get as much seasoning as possible into the jar. Let cool to room temperature. Seal and refrigerate. Enjoy after 24 hours and use within a month.
SERVING SUGGESTIONS
Toss into your favorite salad, use as a burger topping, or enjoy as a martini garnish.
